Hello friends! I've been lurking here since I failed my 1 hour screen last week at 158. This community made me feel so much better about my result! thank you all! I see there's a lot of posts about food recommendation requests. I've been "mindful of my carbs" for the last 6 years, so I have developed an arsenal of good low carb food options. I'll list a few below. Unfortunately many may be specific to the US. Also, luckily my 3 hour test came back all normal and I haven't had to monitor my glucose at home, so i don't speak from GD experience.
These are all things I'm able to find at my local grocery stores (harris teeter and giant)
[Bread] Hotdog buns, burger buns, bagels and slice bread: 647 brand from Schmidt/old time has so much fiber and half the amount of net carbs of regular breads. No one can tell this is "lower carb" bread.
Flat bread and "lavash": Joseph bread has a flax and oat barn line that's VERY good. Again, no one can tell it's lower carb.
Tortillas: so many companies make low carb tortillas, they're generally all good. I prefer Ole extreme.
[Pasta] Al Dente has a line called Carba-nada. It has been a go to. It's the closest to regular pasta with a little more character and half the carbs and double the fiber.
Bonza has chickpea pasta that is 30 grams net carbs per serving. It's a little more squishy than regular pasta, but I like it quite a lot. They have ready mac and cheese boxes with decent macros if you restrict yourself to a single serving!
Explore Cuisine has different types of bean pastas. I like all of them! They all have a mild but distinct taste that can be a hit or miss depending on the dish. They're all VERY good on their own with some light sauce or garlic olive oil. They're very heavy on the protein so I often prefer them with no meat.
[Savory snacks] Beef/jerkey sticks (look at macros)
Olives! Several brands make "liquid free" snacking olives. My favorite is Mario
P3 protein snacks
Popcorn if you can not finished whole bag
Flavored almonds. Blue Diamond has a wide variety of non-boring almonds.
Any snacking cheese in individual packs (string, cheddar sticks, baby Belle.. so many!)
Quest protein chips have only 3 grams net carbs
[Sweet treats] NICK'S products. Ice crams and bars and other stuff too. I LOOoRRRVVVEE their peanut chocolate protein bar, it's basically a snickers bar but not as sweet. It's the very best!

KIND ice cream bars have decent macros!
Halo top ice cream (NOT the whole pint, and not the sorbet)
Skinny Dipped almonds. Espresso and lemon are my favorite!

[Sugar alternatives] I'm a firm believer in diversity and moderation. I believe that having huge amounts of any type of sugar on the regular is not great. So I personally try to mix them up (including having regular sugar in moderation). But here's my two cents.
Monk fruit sugar: most similar to regular sugar. By far my favorite. People can't tell the difference between it and regular sugar. Generally haven't noticed any bad gut effects.
Allulose: not as sweet as sugar. Still good. 85% similar to regular sugar in taste.
Stevia: definitely has a weird aftertaste. Not my favorite but has its uses and great mixed with other sugars or fruit-heavy desserts.
Swerve: pretty alright. It's an erythritol mix which makes me bloated if I consume a lot of it. I use it frequently in small amounts or mixed with other sugars!
Xylitol: has a minty cooling effect. I only like it in icecream and gum. May cause bloating too.
Sucralose: there's been many studies showing its not the best for you. I DON'T avoid it like the plague, but would personally rather have regular sugar over sucralose.
[Quick meals/sides/lunches/snacks] Boca burgers (with 647 buns, mayo cheese and sugar free ketchup!) Just pop them in the microwave for 1:30 mins!
Cherry tomatos + fresh mozzarella + olive oil and balsamic + basil
Cucumber + cream cheese + everything seasoning
Trader joes crisp bread crackers + smoked salmon + cream cheese
[Breakfast, other than the obvious, EGGS <3] Pancakes and waffles, there's SO many brands that make low carb options. Our store has Birch Benders and it's pretty alright!
Avocado + hemp seeds + seasoning + lime (or even a splash of apple cider vinegar)
647 brand toast with a slice of cheddar cheese!
Cottage cheese (even the fruity ones are very low carb)
Cheese platter, sugar free jelly and sugar free peanut butter and crackers/low carb bread
[General cooking advice] If you can, join a service that delivers vegitables to you weekly. This will force you to cook at home and not let things go to waste and eat A LOT more vegetables.
A spiralizer is fun! Veggies are not a substitute for noodles, but they often work well in many dishes!
Cooking shredded cabbage in a very hot wok with soy sauce and garlic is a great base for Asian dishes. A regular pan would steam the cabbage, so it's not as good.
Spaghetti squash is your friend. You can poke holes in it and microwave it whole.
Air frier is another one of your best friends. They speed things up tremendously making it more likely for you to eat at home!
Cooking LOTS of tomatoes + garlic + onion + Italian seasoning + dump any other vegitable and protein you have available until the tomatoes really reduce, will ALWAYS result in a yummy meal. Topped with feta and pine nuts and olive oil? Yes please. Low carb bread works with this.
Any vegitable combination + any ground or shredded protein + a can of salsa + Mexican seasoning + (beans optional, they add fiber, protein and substance but also add carbs) make an excellent meal on its own OR in a low carb tortilla. Avocado and sour cream work on the side.
Salads with a hot protein on top feel more like a meal than an all cold salad. They're less boring too.

Expenses
This year, my husband and I decided that he would take on the bulk of our expenses since I do most of the domestic work/childcare. Expenses I pay will be indicated. My salary is now for my expenses, my investments and my savings, and spoiling the kids. Husband caters for the family basics. There was a point last year when I felt my husband wasn’t as invested in the family because he barely did anything financially. By having him cater for all expenses, he is now definitely involved and invested. My husband’s income is just about the same as mine, slightly higher at some times.

Did you participate in any form of higher education? If yes, how did you pay for it?
Yes, I have a BSc in Accounting, a Masters in Accounting, and a Postgraduate Diploma in Taxation. My parents both have Masters degrees, and in my family, the bare minimum acceptable for education was getting a Bachelors. My mother paid for my undergraduate degree, and I paid cash for my postgraduate studies.

Growing up, what kind of conversations did you have about money?
My parents divorced when I was very young. My dad is the wealthier of the two, my mum has always been middle-class. My mum brought me up with very little financial help from my dad, he only covered tuition and healthcare until I turned 18. My mum catered for everything else. My mum taught me how to look for bargains, how to save and invest, and also how to sometimes enjoy your money.

If you have, when did you move out of your parents'/guardians' house?
I would say I moved out at 26 when I got my current job. I had moved out when I got my first fulltime job, but moved back home when that contract ended

At what age did you become financially responsible for yourself? Does anyone else cover any aspects of your financial life?
At 26 again. That's when I earned enough to cover all my bills without needing help. My husband P covers some aspects of my financial life, and my mum occasionally helps out with stuff for her grandchildren.

What was your first job and why did you get it?
I worked as a receptionist at my mum's law firm after finishing my A Levels (age 18) while waiting to start university. My mum gave me the job to keep me occupied and out of mischief, lol.

Do you worry about money now?
I worry about building generational wealth for my children. I want to make sure they will be set for life as adults. I do worry about money because hyperinflation is eroding my earnings and retirement dramatically. This is my second time losing my retirement. My mum and in laws are losing their retirement for the third time, so honestly our old age looks bleak if we do not invest outside of work pensions.

Do you or have you ever received passive or inherited income?
I receive negligible dividends from the shares I own, lol.

Day 1
0430 – I’m woken up by loadshedding. I sigh, rollover, and sleep some more
0600 – Alarm goes off. I turn it off, enjoy cuddles from P and finally get out of bed. Our water tanks ran out 4 days ago, and council has not yet deigned to give us water, so we rely on P’s parents and friends to give us water. I get my water that was warming up on the stove, and take a quick bucket bath. I moisturize, do my brows, throw my lace wig on (I cut my hair in January, and I’m at a really awkward stage where my hair looks bad when I wear it out all day) and get dressed. It’s cold in the mornings so I put on winter stockings and a black and white chevron patterned dress, nude ballet pumps plus my warm jacket. I get E from the couch where he was watching Cocomelon and my lunch bag out of the kitchen and we head off to his school. After dropping off E, I go to the office. No electricity means no elevator, so I go up the stairs. I see my boss’s boss and greet him as we do the ZESA (local electricity company) sponsored workout. I log in to the work register, fill up my kettle, and settle down to check out my work email. Nothing urgent came through overnight, so I go into my personal email. The wig company I patronize has given me a code for my birthday, and I’m wondering if I should pull the trigger on my cart. I decide to do a report while thinking this through.
My mum is currently working out of the country, so I am managing her local finances/obligations while she’s away. I remember I have to buy the prepaid electricity token for my childhood home as well as for the house she lives in when she’s working in the country. I spend $23 on electricity for both houses (mum’s money so doesn’t count)
1030 – After doing some firefighting and office gossip I have my breakfast. Today its rice, peas and 2 fried eggs. I sprinkle some peri-peri Aromat on top since I don’t have a sauce/gravy ad I have been craving spicy food lately. I also pop my multivitamin and supplements. I check my team’s work and send back anything that needs correcting. I also generate the multiple reports my boss expects from me. I suddenly remember I need to claim my allowance for performing a role that is higher than my actual position at work. I quickly complete the form, and send it to my boss for his signature. The extra money from this is what I use to fund my stock market investments. I also remind my team to send a report to me for consolidation by noon.
12.00 – I do a major push of all my work due today so I can relax after lunch. I compile my reports and set them ready to send. I also finish my first 2 litres of water of the day, and cue up the next 2 litres
1300 – Its lunchtime, and my work bestie and I head out around town**. I find shorts that L would fit and buy 2 pairs for $10**. We head back to the office and I have caramel popcorn for lunch. Then I remember I forgot to have my afternoon meds, oops. Anyway, more work before heading to an audit meeting
1630 – The audit meeting is finally over, and I rush to shut down my computer, pack up my things and go home. I have an agreement with my manager that as long as I make up for the hour, by either coming early or skipping lunch, I can leave work at 4pm. I had a total hysterectomy end of last year so I still can’t manage driving in heavy traffic. I arrive home, make the bed (P had not made it when he went to work), and harvest chilies from our garden that have ripened. I also harvest a local herb used as a flu remedy and lemongrass, so I can brew up a tea/tisane for the flu affected people in my house. I also pack L’s lunch for tomorrow, a pie, a naartjie and juice. It’s also F’s payday, so I give her US$80 (P gave me this money).
E says he is hungry so I feed him sadza and sour milk by his request. I multitask covering L’s school textbook while supervising his homework and watching Married to Real Estate and the Great British Bake Off. I then have my dinner of sadza, greens and beef. I have a chat with the kids about their day at school. P gets home.
1900 – P and my nephew M go to fetch water from P’s friend’s house. The city council still hasn’t opened up our water supply. I do some French on Duolingo while the boys wreak havoc in their playroom. I read L and E their bedtime stories and put them to bed. I decide to do my hair in cornrows while watching Masterchef Australia. They get home and I help them carry water indoors. I remember that when power comes back I need to boil tripe on the stove, so I cut it up, put it in the pot with water, salt and garlic, and place it on the electric stove. We have serious loadshedding these days, so we have a gas stove and solar power to tide us over. I take a quick bath and change into my pyjamas. While P watches TV, I read Wild Sweet Love by Beverly Jenkins and continue to do my hair in cornrows.
2200 – My arms are tired and I’m only halfway through with the cornrows. I give up and go to bed with P.

0600 – I hear crying. E is in a bad mood today. I turn off my alarm, and go to see what’s wrong. E does not want to get dressed for school. I sigh, and help F dress him while he throws a massive tantrum. E is dressed, so I go do my morning routine of shower, moisturize, contact lenses, and eyebrow makeup. Today, I wear a green dress I took from my mum, black tights, nude ballet flats and a black and white coat. E gets put into the car by F, and starts crying for porridge. We are already late, so he learns that the consequence of refusing to eat his porridge on time is to go to school without having his porridge. It’s not a big issue though, as he gets fed at school. So I lock the doors and windows and drive him to school as he throws a tantrum for the entire 10 minute drive. I shove him into the school gate and head to work.
It’s another ZESA sponsored stair workout today. I log into the register, and fill up my kettle with water. I switch on my computer, check my work email and send off client emails to my team for their response. My personal email has an annual report from one of the companies I have shares in so I check out if there’s a dividend this year. I own a negligible number of shares in the company though, but 28c per share is quite impressive. I check to see if my stock exchange wallet has been credited with the money I transferred there so I can buy more shares. It still hasn’t so I send a follow up email o the enquiries desk at the stock exchange. I do have a stockbroker, but I prefer doing my trades myself. I also do some French on Duolingo before 8am.
0830 – Our HR is in a tizzy because people are late for work. I don’t make a big deal out of it usually, because salaries are shit and people are demotivated. As long as my team shows up and does some work, I’m ok. I approve some work, and warn my team about coming in a bit too late. I also tell a teammate that she will have to cover for me on Monday as I am taking the day off. Our internet connectivity is shit so I can’t log into our system to check some stuff. My work bestie gives me avocados from her house. I almost cry because I have been craving avocados, but been too cheap to buy them.
1000 – I have a really bad sore throat. I am also hungry since I haven’t had breakfast yet. I jot down my shopping list for the weekend and head to Pick ‘n’ Pay to buy carrots, green peppers, tomatoes, lemons, cheese, polony and bread. I also buy my breakfast/lunch, which is rice, beans, ox liver and egg salad**. It all cost $10**. I leave my shopping in my car, and go to the office to wolf down my food, and take my multivitamin and painkiller. I also receive my wigs that I bought in May. Perfect timing, as I want to wear a new wig tomorrow for our girls’ day out.
I do some more work, and remind my team to send me the information I need for my daily reports.
1300 – I go out to buy a few items I didn’t find in Pick ‘n’ Pay earlier**. I go to Spar and buy peas, eggs, soft drinks for the outing tomorrow and a sausage roll. Total cost is $10**. The outing has been deemed kid friendly, so I needed drinks for the boys to have tomorrow. I get back into the office, and spend the rest of the lunch hour working.
1600 – It’s finally time to go home. I send my email to handover work issues for the person who will take over my role on Monday while I am on leave. I also send my out of office email, and head home. The kids are at their grandmother’s, so I take a leisurely bath, put on my pyjamas and eat dinner. Then I watch Masterchef Australia until P and E get home. I also get in some French Duolingo practice
2000 – P goes out with his friends, so I snuggle up on the couch with E and watch TV. I put E to bed, read him his bedtime story and kiss him good night. I finally finish season 13 of Masterchef Australia, and move on to My Kitchen Rules Australia. I love Australian reality shows, ngl.
2200 – I go to bed P gets home and tells me some bad news about a friend of ours. I feel very sad for him. He cuddles me and we sleep.

0700 – I wake up feeling like a truck ran me over. I get out of bed, and get ready to hand-wash our laundry. We still have no running water so we can’t use the washing machine. I play music while doing my laundry to keep me motivated
0900 – Laundry has been hung out to dry. F has cooked potato curry, so I boil eggs and water. I have my breakfast of potato curry, egg, multivitamin and coffee. Once I’m done, I give E a bath and dress him. I also bath, moisturize, do my brows and get dressed. I’m wearing jeans and a t-shirt today as my friends and I ae supposed to take our kids out for a playdate. Then I receive a message that the outing is cancelled since one of our group is really sick. I try to think of something I can do with E, since L is out having fun with his grandmother. I do my Swahili Duolingo practice.
1100 – The welder comes to do some work on our garage door. I monitor the work for a bit, and then my nephew takes over. E starts really bugging me to go out. So I put on my headband wig and sneakers, and pack a cooler bag with snacks and drinks. We head into town and I buy myself some ciders for $9. These are for me to drink when the mood strikes me. E wants to go to a resort by the lake so I oblige him. We pay $8 for our entrance. He goes to play on the swings, and I take pictures of him having fun. Another family turns up, and one of his classmates is among them. He’s so happy, and goes to play with his friend. I watch him running around.
1500 – I get a call from my friend that she’s in town with my cake. This cake was meant for the cancelled outing. I pack up our stuff, hustle E into the car and drive back into town. I let out some colourful swear words when I realise I forgot to get our change of $2. Anyway**, I meet up with my friend and get the cake, and pay her $30**. It’s so pretty. I call my MIL while still in town to find out what time she will be there so I can pick up L. She says it will be an hour, so E and I head home to drop off the cake so it doesn’t melt in my AC-less car.
1600 – We are back in town waiting for L and MIL. E wants an ice cream so I buy him one for $0.50 using money I had in my Innbucks wallet. MIL calls and asks me to head over to where she is to pick L up since she can’t leave yet. E and I get there. MIL gets me sadza and goat tripe stew, which I eat a bit of to be polite even though I am not hungry. When I’m done, I pack up the kids and drive home. I bath and change into my pyjamas.
1800 – I feed the kids, and we play until their weekend bedtime of 8pm. I read them their bedtime stories and tuck them in. I watch TV and iron my morning laundry while having a gin and juice until 9pm, and head to read in bed. P and my nephew arrive home from their amateur soccer league match and subsequent outing with the boys. I fall asleep soon after.

Day 4
0700 – I’m woken up by L demanding that I come and play with them. I am still sleepy so I fob him off.
0900 - F knocks on the door and tells us she is off to church. I finally get out of bed and get dressed. I see the boys playing relatively peacefully so I let them continue with their antics. In the kitchen, I find F had cooked breakfast, and since I’m starving, I heat up water for coffee. L surprisingly isn’t hungry so I serve up breakfast for P and me. I have my daily multivitamin. P heads out to go fetch water, while I bath, change and hang out with the kids. I also do my French Duolingo practice for the day
1200 – I have played with the dogs and kids, and I am exhausted. I collapse onto the couch and watch MKR Australia. P gets home, and naps on the couch. I give the kids haircuts and baths.
1700 – L is hungry and really wants cake, so I feed the kids a dinner of sadza and sour milk. Then some cake for dessert. I also pack L’s school lunch, which will be a polony sandwich, a cupcake and juice. The kids play until its bedtime at 7pm. The usual routine, bedtime stories and tuck in is done
2000 – P and I watch a movie while having some alcoholic drinks.
2200 – Bedtime for us

Day 5
0600 – It’s my birthday today. I am going all out celebrating myself since TW I tried unaliving myself twice in the past year. L wishes me a happy birthday before he goes to school. I get birthday messages from my mum, dad, SILs, and friends. I also get a call from my brother, his wife and their son, and they sing to me. I feel very loved today. P goes to drop off E at school today so I can sleep in
0800 – I am finally up and hungry. I cook a quick breakfast of boiled eggs, and a bean curry. P takes my car to get serviced, while I bath, moisturize, contact lenses, do a full face of makeup and get dressed for the day. Today I wear a tie-dyed cutout mini-dress and sneakers, and my wavy headband wig
1300 – P is home and he drives me to a hotel outside town near a renowned tourist site in our country. We have a platter of fried fish, chicken strips, pork strips, fries, and a salad to share and multiple Savannah Drys while there. It’s really nice getting to reconnect after a very tumultuous year in our marriage. P pays.
1700 – We drive around the area, before heading home. Once we get home, P and my nephew go on a hunt for water, while I feed the kids. P and I head off to take our showers. I remember why I don’t do a full face of makeup when it take a long time to get the makeup off my face.
1900 – The family sings happy birthday, and we eat cake. Birthday gifts were gin and chocolate. I hustle the boys off to bed. No story today, as they went to bed later than usual. P watches TV while I read my novel.
2100 – Bedtime for the grownups

0530 – I wake up and lie in bed for a bit. Then I read my novel some more.
0620 – I am up, and take my bath, moisturize, do my brows and get dressed. It’s cold this morning, so I wear a yellow dress with black polka dots, black tights and ankle boots. I pack up the cake I’m giving to my colleagues, as well as my water bottle. E and I head out. I drop E off at school, and go to the office. I log into the work register, turn on my computer, and check my emails. There are a few pressing issues I need to get up to speed with. One of my colleagues gives me $50 as a birthday gift. I also hand out the cake to my team.
0900 – Work is pretty quiet today, so I update my MD. I also receive news that one of my nephews is getting married. He is not that much younger than me, and could be my younger brother, but it makes me feel so old.
Note on my family: In our culture, even distant relatives are given close relationships so the large number of nephews/nieces is from those relationships. It’s a big thing done to maintain close family bonds. I have 4 actual (in a Western sense) nephews and nieces who are all under the age of 6.
1000 – I head to the supermarket and buy bread, onions, carrots, pork chops, pork trotters and my breakfast and lunch. This costs $25. The meat is the main cost driver here. I have a sausage roll, my multivitamin, supplement and milk for breakfast. I remember that I need to check if my stock exchange wallet was credited, ugh. The website is refusing to load and I’m very frustrated. I finally log in and see the amount is still not credited. I email and send a tweet to the stock exchange. Hopefully the tweet will get them to start moving.
1200 – My boss is mad. One member of my team left his desk without informing me and there’s an urgent matter. I was about to go downstairs to give P the groceries, so I stick around for a bit before committing the same offence as my subordinate, lol. I quickly get back into my office and check on work, sign some papers and letters, and clear out my emails.
1300 – My work bestie has to run other errands at lunch so I decide to stay in the office. I check my personal email and see I have received a dividend of $0.27, lol. The share price will probably drop soon, so I will buy more shares in this counter if I can get them to increase my shareholding. My goal for this year is to breach the 10,000 share mark for one counter. I suddenly remember I have work to do, so I use my lunch hour to do the work, and then take a quick break to eat my lunch of fries and a sausage and do some Swahili Duolingo practice.
1500 – I am thinking of going home when one of my team members calls me to deal with an angry client. I go to the office, and find out it’s a surprise birthday party from my team. I am so happy, lol. We have more cake, and there’s also fruit and juice. I head home feeling so appreciated with even more cake.
1700 – P and my nephew go out to get water. I warm up my bath water, and give the kids their dinner. Today its rice and croc meat. I make L’s lunch for tomorrow, a toasted polony sandwich and juice. I also pack my lunch, rice, a fried egg and peas. And some cake for my work bestie’s kids. I take my bath; change into my pyjamas and hound E to eat his food. If we let that kid be, he would probably live on the bits of our souls he sucks out daily by being stubborn. I am feeling nauseous so I have plain rice with a bit of avocado. The kids watch cartoons, while I do some more Swahili on Duolingo.
1900 – Bedtime for the kids. Today, there’s no demand for a bedtime story, so I just tuck them in and tell them I love them. I read my novel as increasingly feel more nauseated. I end up going to hurl my guts out. P comes home and finds me lying limply on the bed. He gives me a cuddle, and goes to eat his dinner. I get up but smell fish, and run back to throw up. If I hadn’t had a hysterectomy, I would be doing a pregnancy test ASAP.
2100 – I go to bed, and lie in bed for a bit, before finally drifting off.

0500 – I wake up feeling nauseated again. Ugh, this reminds me of having hyperemesis while pregnant. I put my water on to heat and get back in bed to read some more.
0600 – E comes to lie on our bed. I get out of bed, and go throw up. I get my bath water, take my bath, moisturize and put my contacts in. I look like a reanimated corpse this morning. I do my brows to try bring a bit of life to my face and get dressed. It’s very misty and cold today so I put on warm brown tights, a long black dress, my warm jacket and ballet flats. I grab my lunch and the cake, pop E into the car and head out. Visibility is extremely low, so I drive slowly. I don’t know why people like surprising other drivers by having their cars pop out of the mist without switching on their headlights. I successfully avoid the drivers who hate life and drop E off at school before heading to work.
0700 – I am in the office, and I log into the register, before turning on my computer and checking my work email. Not too much in there, so I check my personal email. My stock exchange wallet has finally been credited with the $100. I also ponder whether I should pull the trigger on a V-part wig.
I do my weekly report, and start doing some boring work in the system. I realise I didn’t save the work I did yesterday, so I have to re-do it, so I can have the list of error messages to send to ICT.
0830 – Everyone is in the office, so I do some reshuffling of duties, so that essential areas are covered while one of my colleagues is on leave. I give the cake to work bestie, who tells me how much her daughter was excited over the cake yesterday. It’s now time for me to put my head down and really focus on knocking out the system work today. I also log into an online training, and I listen while doing my work. My mum also deposits money for my birthday gift and to spoil her grandkids.
1000 – I log into my stock exchange account and buy shares for $99.14 (doesn’t count as spending, as the money was moved before the MD started). The deadline for other departments to submit their weekly reports to me for consolidation has passed so I start following up. One department is a big problem as they always send their report late. Le sigh. I draft a very passive aggressive email to them. I also decide not to buy the wig and instead ask the person making me my custom earrings that I got myself for my birthday to bill me the rest of the money so I can pay and move the remainder of the money in my account into savings. Our currency has taken an enormous hit in the last week, and is free falling dramatically. I’d rather keep USD cash than money in my account at this point. The training finally ends.
1100 – I’m getting hungry so I go warm up my lunch, sprinkle on peri peri Aromat and dig in. Yum. I also have my multivitamin and supplement. A lady who sells local snacks comes in. She persuades me to buy maputi (corn nuts mixed with roasted peanuts) for $0.50. I buy them for my afternoon snack. I end up sending the report with missing statistics, and tell the department to send directly to the compiler, as they were late. That was a very aggressive email tbh. I’m still hungry, so I munch on my maputi, leaving the peanuts because I don’t feel like eating them lately.
1200 – I see a missed call from a number I don’t know. I call and it turns out they had sent money to my mobile wallet mistakenly. I check the mobile wallet and it shows it had an extra $11. I send the money back to the person. Times are too tough to keep people’s money
1400 – I snack on a few skittles instead of having more food. I just want something to entertain my mouth, I’m not hungry at all. I review more work and drink more water. The jeweler has sent the payment request for the earrings. I pay $100 (total spent on the earrings comes to $200, which is worth it for sterling silver custom made Jewellery. I use $50 of the birthday money from my mum to cover for part of this expense)
1600 – Finally time to go home. I shut down my computer, and drive home. Once I’m home, I put on my bath water, and help L do his homework. Then I do some Swahili Duolingo practice and pack L’s lunch for tomorrow. He requested maize (corn on the cob), a boiled egg and a naartjie. His wish is my command for once. I also pack my lunch, a boiled egg, peanut butter sandwich and a bit of birthday cake. The jeweler sends pictures of the final product. They are absolutely gorgeous. Happy 34th birthday to me!!!
1800 – I serve the kids their dinner, and go to take my bath. P sends a text that he will be home late as they are working late today. I have my own dinner while persuading E to eat his food
1900 – Bedtime for the kids. I read them their bedtime stories, tuck them in and tell them I love them. Then I go to watch TV. I’m catching up on Married to Real Estate, Food Factory and Man Vs Food. You can tell that reality TV is my jam.
2100 – I decide to have some decaf black coffee and cake as my bedtime snack. P and my nephew arrive home. They are later than they thought they would be because nephew dropped his phone in the middle of the highway and they were searching for it. Because nephew’s ancestors were on the job, they found it intact. It’s a big deal because this is a major highway and huge trucks use that road constantly. I chat with P as he has his dinner and takes his bath.

Reflections on this week’s spending
The spending is pretty much about normal for me tbh (excluding the cake and earrings). I had quite a bit of petrol in the tank so I didn’t need to top up my tank this week. The converted US$ prices are a bit inaccurate since our currency had a big drop this week, and most of my spending is in local currency. I could reign in my spending a bit, and focus more on investing. However, I do enjoy using my money to bring joy to my kids and myself. Particularly myself after the absolutely shitty year I had.

spoiler tag because i don’t want to gross anyone out.
I’m a 21F and have had this rash for 6-8 weeks on my arms, legs, and chest. I have eczema, arthritis, celiac’s and I’m currently on a waitlist to be seen by a rheumatologist in December (earliest i could be seen) because my GP has suspicions of Lupus or Adult Still’s.
I have a fairly healthy lifestyle. I limit sugar, don’t do much processed foods, don’t do dairy or eggs. I will sometimes have cheese. I don’t do caffeine or dark soda, only sprite zero on occasion.
I use products that are fragrance free in my entire apartment. From detergent to shampoo to soap. I use the cetaphil hydrating body moisturizer, and the aveeno intense moisture repair cream then follow up with beef tallow. I take bleach baths about once a week and will do a colloidal oatmeal bath 2x a week as well. I have a humidifier and an air purifier by my bed. No pets. No animals even allowed in my apartment.
The tallow has helped everywhere that my eczema typically flares (inner elbows, neck, face, back of knees) but this rash on my arms and legs only seems to be getting worse. it’s itchy and it burns. I can’t sleep anymore. I don’t want to leave the house at all unless I’m wearing sweatpants and a sweatshirt. I feel like I’m going crazy.
Please just give me anything that will help it go away.

I’ve had eczema my whole life, and here in the past 6-8 weeks, I’ve been getting a rash like this all over my body. I have been using the cetaphil body lotion, and an aveeno intense moisturizer for sensitive skin. I don’t use any products with fragrance anywhere in the house. We don’t even light our candles anymore. I have a humidifier and an air purifier next to my bed. It only seems to be getting worse. I also started using beef tallow on my body and it has basically cured all my usual spots of eczema (inner elbows, backs of knees, neck, face) but my arms and hands will not relent. I’m seriously at a loss.
I had an appointment with my allergist last week but couldn’t be seen because my old primary insurance expired but my secondary stayed. The secondary was active during all the referrals, but I’m required to get a whole new referral and my regular physician will not send it. I’m in a wait and see game right now.
I have an appointment set for December 21st with a rheumatologist because that’s the soonest appointment they had open. I have had Idiopathic Arthritis since I was a year old, and have had Celiac’s since I was 16. I’m currently being sent by my GP for suspicions of lupus or Adult Still’s disease. I can’t find anything online and all my GP can do is give me more steroid cream and I don’t want that.
I have a pretty healthy diet. I don’t do gluten, eggs, and most dairy. I’ll occasionally have cheese, but I stick to lactose free milks. I don’t do much sugar either. If I want sweets, I eat fruit. I take my vitamins every day, I take bleach baths occasionally (no more than once a week), and take colloidal oatmeal baths regularly, but it just will not go away. It’s up on my chest as well. I have a free and clear detergent.
Sorry this was all over the place, I just want some help. It’s unbearable.
TL;DR: I have had this rash for 6-8 weeks all over my body even though I have a fairly healthy lifestyle.

2023.06.08 06:12 FlaymingLehmons I need some last-minute recipe recommendations for an upcoming family trip.

So I'm heading to a resort with some family pretty soon and our agreement was that every pair of people going has to make dinner at least once during the trip. I, however, am making the number of people there odd so I will likely have help offered but would like to see what I can do on my own. I was initially going to make some egg drop soup, but I recently found out out most of the people going on the trip don't like it, so I need a new idea. I don't want to sound too picky, but essentially I would greatly appreciate an Asian or Italian recipe that uses preferably affordable ingredients, no fancy implements you wouldn't expect to find in a resort villa's kitchen, must be able to feed approximately 9 people or at least scale easily to that point, and I would really appreciate it if it were on the easier side for a lone 19 year old dude who knows at least some of his way around a kitchen. It's good to note that there are a couple somewhat picky eaters in the mix. Like cheese or pepperoni are the only pizza they eat kind of picky eaters. Also one of them doesn't like pork, she thinks it makes her sick. It doesn't actually make her sick though she just got a bit of food poisoning from a dish that happened to have pork in it once and had since been fine eating barbecue ribs, so pork is okay as long as it's plausibly something else but it'd save some potential headache if there isn't pork in the recipe.

I was diagnosed with Crohn 2 years ago and I remember, before getting treated, some food started having a weird taste and smell for me (eggs and maple syrup sausages). It tasted and smelled horrible but after getting my diagnosis and getting treated for my ulcerous, it just stopped. Since then it smells like it used to and it taste what it used to as well. Did anyone else experienced something similar? I have no idea of how it could be related maybe it’s not but not a lot is known about Crohn so if anyone had similar stories don’t hesitate to share them!

BACKGROUND
Long story short I spent 8 years on the West Coast holding increasingly important positions in the energy industry, but I hated it with every fiber of my being. I started taking nursing prerequisite courses in January of 2020. Family trauma happened. I moved home to Texas to be closer to my family, quit my job (was making ~$130k with bonus), and took the plunge and went to back to school for nursing at 31. I am half way done with an accelerated BSN program and I have a 4.0 GPA. I love it so much despite it being very difficult. I have externship currently and I have an ICU internship lined up for my final semester, which is basically a guaranteed new grad job.
I currently live with my mom and brother. We are remodeling our house so we are in an apartment for a bit. Very tight quarters but thankful to be with them. Boyfriend just successfully made a big career move and is now a superintendent for an important and well respected organization in town making $60k annually with a 8% bonus. Very proud of him and very excited for our future - we are talking about getting engaged in the next year. He is getting an apartment in the next couple months after living at home with his family due to some major family health issues he has been helping out with so you will see some of the apartment search start to happen in this diary!
Currently boyfriend and I split going out expenses pretty much down the line, but with this new job we had a discussion last week about how he will pay for the majority of our going out costs moving forward once he gets his first paycheck this month until I start working full time again in January!

**I don’t carry any credit card debt / no student loan debt / no equity in any kind of home. I was lucky enough to be in a position where I saved up over $40k cash to pay for living expenses when in school. My UGMA account will be used as part of a down payment for a house in the next couple years. My current BSN degree is being covered through family. Income Progression: I worked in the energy industry for 8 years; my starting salary was $35,000.
I worked in the Seattle area starting out at $35k in 2014. Moved to a new job in 2016 for $65k and then another new job in 2018 for $85k +12% bonus. Got up to $104k + 20% bonus before I quit. Also worked as a CNA on the weekends for about 6 months for $15 an hour during COVID to make sure I really wanted to go to nursing school.
Main Job Monthly Take Home: It varies but the average so far this year it is $535. I have an incredibly flexible externship at a hospital very close to where I live where my director literally just lets me show up whenever I want to work. I make $17 an hour. I met a couple incredible mentors but I think I am going to quit soon since it just won’t be feasible to work this semester and I already have my ICU internship lined up for September. Trying to be easier on myself and put myself first and I feel very lucky that I don’t need to work. Don’t get me wrong the extra money is SO NICE but I want to concentrate on school, myself, family, partner, and friends. Work on top of an accelerated nursing program is too much. I am actually the only one working in my cohort currently.
Any Other Monthly Income Here: I live with my mom right now and she pays for most of the groceries, utilities, etc. I feel incredibly privileged and lucky that I can live with her and that she is able to support me in this way while I transition careers. I do lots for her to support her such as chores, errands, paying for big Costco runs, etc. My boyfriend also helps out with pet expenses and other things I want / need.
MONTHLY EXPENSES

WEDNESDAY - DAY 1
8:45: I slept 10 hours last night and it was glorious. I worked a 12 hour shift at the hospital yesterday and our patient acuity was very high.
9:30: Make a coffee and walk and feed my pup. I walk over to the pool for a morning swim. I love a quiet morning swim so much.
11:30: I had a nice 500 yd swim, drank a Premier Protein shake & ate overnight oats with blueberries for breakfast, had a relaxing shower, and started some laundry. Feeling anxious about everything I have on my plate currently. Also I feel hungover from work yesterday. I was going to work another 12 hour shift tomorrow but now I don’t know if I can handle it with school also starting on Friday and a very busy social weekend coming up. Luckily, my director literally lets me show up whenever I want so I may do 7 or 8 hours tomorrow instead of a full 12. Try to table my feelings to discuss in therapy this afternoon.
11:40: Sit down to finish some online orientation for my internship that is coming up my final semester.
13:03: Orientation stuff only took about 20 minutes thank god. I ran to the grocery store and grab a 4 pack of watermelon Celsius, frozen veggies, Eggo waffles, tea bags, string cheese, coffee filters, Wheat Thins, and lean ground beef ($37.01). Head up to the rooftop lounge at the apartment complex to FaceTime a friend that lives across the country since there is zero privacy in the apartment.
14:15: Get off FaceTime, work on some more laundry, and head out to therapy.
16:15: Good, productive, fun, and validating therapy session and I make it over to my friend’s condo to check on her kitties. I had set up a reoccurring biweekly therapy appointment now that I know my school schedule for the upcoming semester too. We talked about money fixation and anxiety and trying to let that go. We agree that I should sleep in a bit tomorrow, walk my dog, go for a swim, and then go to work. I don’t ~need~ the money so working 12 hours vs 7 or 8 is not an issue. My mental health is more important. Also the work hangover from yesterday is real.
17:00: Boyfriend comes over after work and jumps in the shower while I’m a couch potato (Disclaimer: he’s friends with my friend too and she’s 100% comfortable with him hanging out too.) We relax and hang with the kitties and catch up on our days.
18:45: We head to dinner. We grab burritos at one of our favorite local spots and I pay ($25.88). We look at houses for fun on Zillow and discuss what apartments we want to tour in the next couple weeks.
20:00: I make it home and have a long talk with my mom about her friend who ended up in the hospital today with a compound fracture. Long story short I’ll need to stay up until midnight to hand off the house keys, garage door opener, etc. to a friend who is driving into town that can take care of her dog. Her dog is a pit bull that is vicious to strangers so no one else can go over to the house other than this friend who pet sits and knows the dog.
23:30: The friend makes it and we hand him the keys and everything he needs. I had spent the evening tidying up and meal prepping and looking at more apartments. It’s amazing to me how much time goes into keeping a clean and tidy home.
12:08: I spent a half hour setting up my June budget and then pass out.

THURSDAY - DAY 2
9:05: I finally wake up to a bunch of texts from multiple different friends / friend groups. Ugh. I’m just feeling really anxious about school starting tomorrow, my mom being very distraught over her colleague / friend, working today, and a busy weekend coming up. I make some coffee and walk my pup.
9:33: I call my mom while feeding my pup breakfast and tell her how I’m feeling and we both agreed I ran around too much last semester and I told her I am setting firm boundaries with myself to basically not do anything social during the school week once clinical start (Monday - Thursday) unless it’s like a super casual dinner and I truly have the capacity for it. I burned myself out at the end of last semester and spent weeks putting the pieces back together.
9:55: I make another cup of coffee and take myself for a morning swim. It brings me so much joy and grounds me. I swim 500 yards and then jump into the shower, throw my scrubs on, kiss my pup goodbye and head to the hospital. I drink a chocolate Primer Protein shake and call my friend L on the way to hear how her trip has been going so far. It was nice to catch up even though we saw each other over the weekend lol.
10:54: Ate my overnight oats made with half and half and some blueberries, clocked in, and headed out to the floor. Immediately get asked to be a sitter which literally never happens. Thank you universe. Feeling a little less anxious now that I’m here and feeling thankful for the little bit of extra money I’m making and being here for my community.
14:04: Maybe not thank you universe - the patient slept for a while then got extremely combative and was trying to punch me. I switch off with a coworker and head to the break room to eat a bowl I made with frozen veggies + rotisserie chicken from Costco + cheddar cheese on top.
19:09: I finally clock out. I had a snack of 2 rice cakes and some almonds at one point. Rest of work was wild (i.e. a psychotic patient that pulled out his IV and was throwing things everywhere, someone screaming in pain for hours nonstop, etc.) and had me questioning what I am doing making this career change. I am tired.
19:49: I make it home after swinging by L’s to check on her kitties. Jump in the shower. My mom has dinner ready and I scarf down this gorgeous basil, mozzarella, peppers, tomatoes, avocados, and olive salad + a couple Trader Joe’s dolmas + a couple pieces of fresh bread. Delicious. I force myself to get my food and my school bag ready for tomorrow and lay my scrubs out before I crawl into bed a little after 9.

FRIDAY - DAY 3
06:22: Alarm goes off and I roll out of bed and take my pup for a nice walk. Give him breakfast / shower / throw on my scrubs / pack my lunch / give the pup a big kiss goodbye and I am out the door a little after 7:00.
07:47: I get to school and I am NOT feeling it lol. I stopped at Costco for gas on my way ($20.67) and I also swung by a very Texas niche store that sells all kinds of beef jerky my brother really likes to grab some for his birthday coming up ($17.98).
10:00: Class is boring - it’s tough getting back into it with an 8 hour cardiac lecture. It’s good to see my friends but struggle is real. I run into my favorite professor and she makes my morning. I tell her all about my upcoming internship and my boyfriend’s new job and she was stoked and told me to “lock him down” hahaha. I also make 2 phone calls to apartment complexes we are interested in cause my boyfriend doesn’t get great reception at work during business hours. One place doesn’t have any current availability but the lady was so nice and will be sending me a virtual tour later today. Schedule another tour on Monday afternoon.
11:30: We break for lunch and I eat the same thing as yesterday - rotisserie chicken + frozen veggies + cheddar cheese.
12:30: Spend the afternoon in class completely unable to concentrate. The professor is throwing ECG rhythms around left and right. 8 hours of ECG lecture is NOT a productive way to learn the material. I work on a couple study guides during class cause I cannot.
3:30: We get out a little early and I rush to meet my mom for a walk through of the house. I follow her back to her office because I sent a big Chewy order there. Pick up the box along with a Diet Coke, order us Cava for dinner, pick up Cava, check on my friends cats on my way home real quick, and then have a shower and relax. 7:00: We eat dinner all together when everyone is eventually home (harissa avocado bowl for me!) and then my boyfriend calls right when I head out to walk my dog. Perfect. I miss him and have been having anxiety around our new schedules. We have a good 30 minute chat about our days before I spend the evening basically doing nothing. I chat with my family and mess around on my phone. Text boyfriend about different apartments.
22:44: Bed time after I brush and floss my teeth. I’m zonked from the week.

SATURDAY - DAY 4
08:30: I’m awake! Did not sleep well at all cause thunderstorms. My pup is deathly afraid and will not stop shaking for hours so I end up sleeping on the couch on and off. We were up and down all night but somehow I feel okay. We go for a quick walk, feed him, and start a load of whites in the washer.
09:08: I have a shower, and then I head out to get my family coffee from one of our favorite spots.
10:45: Make it back home with 2 cold brews for my brother and I and a latte for mom. I also picked up 5 breakfast tacos and a German chocolate cake for Sunday dinner tomorrow ($56.24). I eat a bean and cheese taco and a potato and egg taco, start some laundry, and put air in my tires with my home compressor since my low air light has been on in my car for an embarrassing amount of time. Brother needs air in his tires too so turns into a production lol.
12:18: Spent a couple hours putzing around dealing with the tires and more laundry and packing a bag for tonight. We are headed to the lake for a friend’s bday party and I have no clue what I want to wear so I pack a lot of options and clothes for church tomorrow morning too. Now it’s time to drive around for a little bit and check out some potential apartments and do a small Target run.
14:02: I make it home from apartment cruising and my Target run. I bought a 3 subject notebook, tire pressure gauge with valve caps included, two bags of frozen veggies, mini coke zeros, and a bag of Lesser Evil popcorn ($21.50). I was so tempted to stop for lunch on my way home but lines were long everywhere so I made myself some cheesy eggs + 2 Eggo waffles when I got home. Put the valve cap on my tire that is missing one.
14:36: Make it to L’s condo and clean up after the cats and start the Roomba. Boyfriend texts that he is out of work and on his way over! He’s been up since 4 am this morning for work and I am feeling some type of way with everything on my plate / anxiety so we will see how long we make it tonight lol.
15:30: S is showered and we are out the door!
16:30: We make it to the rental, change into our bathing suits, and walk down to the river.
19:00: We hang out in the river for a good 2.5 hours. It was a good time - nice to chat with my school friends and their partners. Boyfriend and I head out before the real partying starts lol.
20:00: We eat dinner at this cute Tex Mex place. Boyfriend has some kind of alcoholic mixed drink and we share a fajita for 2 plate. Boyfriend pays - it was $70.56 with tip. I drive us back because he does not like to drive even after one drink which I am 100% here for. We are so tired lol.
21:15: Make it back to L’s condo and we take a hot shower and get into bed in the guest bedroom. It takes forever for us to both fall asleep.

SUNDAY - DAY 5
6:50: Oh boy neither of us slept well. There was another thunderstorm. One of the cats was yowling nonstop outside our door. The ceiling fan was clanking on and off. The bed was way too soft. Up and down again all night for a second night in a row for me lol.
8:11: I’m showered and we are both dressed and we head out to one of our favorite taquerias for breakfast. I get 2 bean and cheese tacos and one machacado + egg taco. Boyfriend also gets 3 tacos and we both get coffee. We sit and chat for a while until it was time to go to church. I pay on the way out ($22.98 with tip).
11:40: After an hour of church and an hour meeting for a committee I’m on - I’m wiped out. Still have a house walk through to do with my family and boyfriend so I head over there and we are there for about an hour.
13:10: Finally made it home, walked my pup, and made myself a late lunch of Dave’s Killer bread toast + peanut butter + banana.
13:54: A girlfriend calls and asks if I want to get a pedicure this afternoon. We decide to get dinner together on Thursday instead. I’m actually very touched she called me because we are friends through another friend and normally don’t get together just the two of us. I’m really happy she reached out. I also invite one of my friends from school - I have been wanting them to meet for a while.
14:30: Nap timeeeee! I knock out for an hour then realize how thirsty I am and how badly I need to get out of the apartment. I get up, take the pup for a spin with my brother, and head to Sonic to get a large diet cherry limeade and then head to L’s condo to check on the kitties and chill ($3.34).
18:00: I spent a couple hours chilling on the internet - working on my google calendar, school organization, church emails, reviewing some apartments we may drive by tomorrow, and I download the remaining episodes of season 1 of Nurse Jackie to watch tonight. I had bought the complete first season over a month ago and still haven’t watched it all lol. That’s how little I watch tv.
20:00: We had bibimbap for dinner and German chocolate cake for dessert. Delicious. I clean up the dishes and do more laundry because that’s my life between school, work, working out, having 2 hairy pets, etc. Unpack my bags from the river day and sleepover last night too. Chat with my family.
22:00: Crawl into bed and watch some Nurse Jackie before passing out.

MONDAY - DAY 6
7:33: I slept better but still tossed and turned. Still just anxious with everything going on, especially the start of another intense semester.
8:47: Pup is fed and walked. I open the windows because it is 68 degrees which is unheard of in June in south Texas.
10:06: I ended up doing a deep clean of my room hahah. Wiped down and vacuumed every surface. So much hair. My pup is shedding so bad. I change my bedding and toss my comforter in the wash. Thank goodness I have 2 sets of sheets now. I had only 1 for the longest time lol. I take a break and eat some Greek yogurt + pecans + banana + drizzle of honey.
11:03: I vacuumed the common areas in the apartment, took a long shower, and I’m dressed and ready for my boyfriend to pick me up. I felt like being cute today so I put on this new leather skirt from Alice + Olivia my boyfriend got me as a present that I haven’t worn yet + a white crop top + my cheetah old skool Vans. I’m so tired though lololol. This is one of the only Mondays we both have off for the foreseeable future so I am gonna rally and make the most of it!
11:15: Boyfriend is so tired too bahah. We go grab coffees at this cute little coffee shop I’ve been wanting to check out. I get a cortado. Boyfriend gets an iced caramel almond milk latte and I treat ($11.82 with tip). We sit and chill and map out what apartments we want to check out today.
12:30: Walk across the street to grab Tex Mex for lunch at a pretty famous place in town. I get the enchilada plate and boyfriend gets a chicken quesadilla plate. He pays and it is $27.89 with tip.
1:30: Go for our first apartment tour of the day and it is depressing. We drive around and check out the other apartments we are I interested in and then go on one more tour at a place that we are really impressed by. It’s $1.3k or so for a 500 sq ft one bedroom and that’s a stretch. Ideally he wants the base rent to be $1,000 or less which is quite doable. Yet again - south Texas prices for the win. He is looking at older buildings, but they are well kept up and in good neighborhoods. They are not in the hottest places to be in town, but definitely still nice.
16:00: We go back to L’s condo and chill and take care of the kitties. Discuss the apartments and ask my brother if he wants to get dinner with us and he agrees.
18:00: We head back to my apartment, pick up my brother, and head to dinner. We order a large caesar salad, an arugula and sausage pizza, and a mushroom and pepperoni pizza. This spot does $10 two topping pizzas on Monday and it slaps. I treat my boyfriend and brother to dinner ($48.01 with tip).
20:00: Home and boyfriend walks my pup with me. Brother makes us both tea and we have a nice cup of tea and chat until boyfriend heads home. I put together my breakfast and lunch tomorrow and then lay down to chill and have some quiet time.
22:30: Bed time! First day of critical care didactic is tomorrow and I am feeling mostly excited.

6:22: My alarm goes off and wakes me from a deep sleep. I finally slept a good 8 hours though!
7:10: I am showered and throw on some black Lululemon Align leggings and a swiftly tech tee. I was gonna wear real pants but screw that haha. I am really dragging this morning.
7:50: Make it to school and lecture starts at 8. Honestly - that lecture could have been given in 45 minutes but we spent the first 2 hours simply going over the schedule and clarifying assignments since everything is such a disorganized hot mess at the beginning of the semester.
10:05: We take a break and call a fellow church congregation member to see if we want to meet today to tour an organization that supports people immigrating. We are debating if we want to allocate church donation funds to them. We agree to meet at the location at 1:30.
12:41: We are done with class and I stayed a bit after to start making my study guide for our first test even though it isn’t for 5 weeks. I realize the time and quickly pack up and go heat up my lunch. Chat with an MSN student who I had met in orientation for my internship a couple weeks ago and he expressed his frustration about how the start of this semester is rough for him too.
2:38: We finish our tour and we are very impressed at the clean and organized operation. We agree to each write our own follow up email to the rest of the group before the end of the day supplying the church donating.
3:30: I make some jasmine tea and have some quiet time when I get home before starting on some dosage calculation problems that are due on Friday.
5:45: I end up spending almost 2.5 hours on homework - dosage calculations, an article summary, and start on a medication sheet. Ouch. I lay down for 20 minutes, take my pup out, and then head out to meet my friend for dinner at Cava.
6:30: I get the lemon chicken bowl and pita chips ($13.69) and we sit and chat for a 1.5 hours. We just saw each other a couple weeks ago, but so much to catch up on.
20:00: We agree to go on a double date in the next couple weeks and I head home. I walk my pup with my mom and brother, pack my gym bag and my food for tomorrow, write my follow up emails from today’s visit to the church committee, and relax in bed.

REFLECTION
I spent quite a bit on going out to eat this week with my boyfriend, family, and friends. It was the end of my school break and boyfriend is transitioning to a new job so we were a bit out of whack with spending on food. Usually we eat at home with our families more, but it was nice to go out and enjoy ourselves too. It was a super busy week for me too - which is the norm lately. I have a great community and social life here compared to the West Coast and I do not take that for granted. Trying to make myself more of a priority so I don’t burn out again, which is difficult for me.

So it’s stated that Sam lays the eggs that hatch into all the Mudokons in the service of the Magog Cartel, and that these are then shipped to the various companies under its banner, but is it ever stated in any sources what their childhoods are like?
Maybe they are reared like chickens or turkeys, since they are related to birds. At the same time though, you’d think that they would want to make them loyal to the company in some way.

Every time I go to the grocery store, prices are higher than the last time. Even cheaper vegetables are priced ridiculously. Yesterday at work instead of buying lunch at the cafeteria I ran to the grocery store to buy lunch meat and bread, just to save money. My no frills, homemade (workmade) sandwiches (tomato, bread, turkey, cheese) came to over $4 each. Are people living off of rice and beans now? Which fruits, vegetables, and meats are you finding are still relatively affordable?

I also added minced baby Bella mushrooms and sautéed them with the onions and garlic. To the pita i cut the Kafta in half lengthwise then I added arugula, tomato, and feta. I also added basil to the tzatziki. Recipe below.
2 teaspoons olive oil 1 small onion, minced 2 cloves garlic, minced, divided 1 pound 85% Lean Ground Turkey ¼ cup finely chopped parsley 2 tablespoons dry breadcrumbs 2 teaspoon ground cumin 1 teaspoon sumac, optional (can use lemon pepper or lemon zest as substitute) ¾ teaspoon salt, divided ¼ teaspoon ground pepper ¼ teaspoon cinnamon ¼ teaspoon allspice 1/8 teaspoon ground cloves ½ large cucumber ½ cup plain full-fat Greek yogurt 1 tablespoon lemon juice
Heat oil in a medium skillet over medium-high heat. Add onion and half of the garlic and cook, stirring often until the onion starts to soften and brown, about 5 minutes. Scrape into a bowl to cool for 10 minutes.
Preheat grill to medium-high heat. Meanwhile, knead ground turkey, the onion mixture, parsley, breadcrumbs, cumin, sumac, ½ teaspoon salt, pepper, cinnamon, allspice and cloves in a medium bowl with clean hands until the seasonings are evenly distributed through the meat.
Divide into 8 portions. Shape each portion into a 3-inch sausage shape. Thread meat onto a heavy metal skewer.
Soak a folded paper towel with oil. Hold the towel with tongs. Drag it along the grill grate toward you to oil grill rack. Do this immediately before adding the meat, as the oil will cook off quickly.
Grill kebabs, turning once, until cooked through, 9 to 13 minutes. Let rest 4 to 5 minutes.
Meanwhile, grate the cucumber and place in a colander or strainer. Squeeze excess moisture from the cucumber. Stir the cucumber, yogurt, lemon juice, the remaining garlic and the remaining ¼ teaspoon salt.
Serve the kofta with the yogurt sauce.

Hey guys I'm undergoing tests atm for stomach/intestinal issues, the last 2 weeks have sucked and I've been so bloody nauseated and fatigued it's been driving me nuts. Turns out my "healthy" diet was causing me to flare up so I've been googling and making a shopping list that I can eat/partly enjoy...its a bit mish mash atm...I'm gonna paste it below. Please give me feedback and ideas for meals. Also I love hotdogs, burritos/enchiladas...give me alternatives if you guys have any. I'm not amazing with dairy products I can handle small amounts of cheese or American slices but cant drink regular milk. If you have any meal ideas based on the list please feel free to chime in I'm not a fussy eater at all just struggling to find foods/meals I can eat that won't cause me pain.
I'm 36 and have never had to really worry about this before, it's a bit of a system shock having to be so careful with my diet tbh and I'm not exactly ecstatic lol but I want to avoid flare ups like this as I feel like absolute crap atm.
List is mish mash as its the same order as the shelves in the shop I go to lol.

IBS/Crohns Shopping list

-low fat beef mince 5% small pack to test when not flared up. Homemade burritos chopped tomatoes, lettuce, peppers, a little bbq sauce. Meat cooked in spray oil, Paprika, salt and pepper on the beef. Bland as hell burrito better than nothing...
-Smooth unsweetened peanut butter.
-porridge oats with some dried cranberries and banana.
-White Bread (this the best option right?)
-White wraps (ok for ibs?)
-White buns
This is all i have so far. Fed up of stomach cramps and fatigue now so any tips are welcome!

2023.06.08 01:38 cinnamonpeaches_ Easing up on diet after goals have been reached?

TLDR, making good choices 99% of the time. Is it safe to try 80/20?
I’ve been doing so well with this new life style. Cut 99% of junk and all full fat dairy + red meat, getting more exercise, lots of daily oats, fruits, and veggies, yadda yadda. I’m feeling a little less anxious than I did when I began these changes a little over a month ago. I sneak a piece or two of dark chocolate a week, had a sugary drink the other day and didn’t beat myself up over it, but I’m not reverting back to old habits of course. I know for a fact I’m doing better now because I used to drink soda all day, white pasta and cheese every day, and lots of baked treats. I’ve had nearly none of this since starting the diet.
But this makes me wonder, if I already know that I’m on the right track, can I start adding in a couple more less than desirable choices here and there? Right now all I’m doing is trying to get my numbers as low as possible and as fast as possible. But honestly haven’t given too much thought about realistically keeping this up exactly this way for the rest of my life.
Should I wait until I retest and see how I’m doing before I consider adding some things back in (like dairy, or some prepackaged snacks, or white refined carbs occasionally)? Or do I add them in now, before I test, so I’ll know what my limits are and won’t feel like I’ve reversed my progress. Does this make sense? I definitely don’t plan on having cheeseburgers and ice cream every single day, but NEVER having these kind of things has admittedly been a little tough and unavoidable sometimes. Sometimes I just want an iced latte and a bacon egg and cheese bagel 🥲
